- 2 cups maida / all purpose flour
- salt 1 tsp
- 1tsp kalonji / nigella seeds
- 1/2 tsp baking powder
- 2 tbsps refined oil
- water as needed
- oil for deep frying
In a large bowl add in the maida,salt ,baking powder,2 tbsps oil and kalonji and mix well.Now mix in water as needed and knead into a stiff dough,Cover with a damp towel and rest the dough for 10-15 mins.
In a frying wok/ kadhai, heat sufficient oil to deep fry the nimkis.Divide the dough into 5 balls.Take a ball and roll into a chapati.Cut the uneven edges from all the sides shaping it into a square.with a help of a knife cut long strips of the dough and then cut diagonally so as to form diamond shapes.
Once the oil is hot,reduce the flame and add the nimkis and fry until golden in colour.Strain the excess oil and let the nimkis cool down completely before storing them in air tight containers.
They can be stored upto a month.Enjoy with your hot cup of tea or just like that 🙂
