Chicken bhuna is spicy, masaledaar curry which is easy to make and takes just 30 mins to make.Loads of onions, chillies and tomatoes give it that spicy tangy tingling taste.This curry can be made both sukkha/dry or make a nice gravy.Usually i add boiled potatoes to the curry which tastes equally good. I made this chicken bhuna dry and served it with rice or roti with a side of dal or raita and onion slices.Totally amazing for a weekday dinner.
- 2 medium sized chicken breasts cut into cubes
- 2 large onions finely chopped
- 1 tomato finely chopped
- 1tbsp of ginger garlic paste
- 2 tbsp oil
- Whole spices-bay leaf,peppercorns,cardamoms,cinnamon sticks
- 1 tsp jeera/cumin seeds
- salt to taste
- 1 tsp red chilli powder
- 1 tsp tumeric powder
- 1 tsp garam masala
- 1 tsp crushed kasuri methi
- 1 tsp meat masala/ cumin-coriander powder
- water as per needed
- chopped coriander leaves for garnish
- a pinch of homemade garam masala
Wash the chicken pieces and keep aside.In a kadhai/wok . Add in oil,whole spices and jeera. Once the cumin crackles add in the chopped onions and fry until golden brown.Add in ginger garlic paste,kasuri methi, turmeric powder,red chilli powder and tomatoes.fry for a while until tomatoes turn mushy.
Add in the chicken pieces and saute for a while.Add in salt to taste and cover and let it cook until the water from the chicken completely evaporates,keep checking inbetween.
Add in garam masala and meat masala and give a good mix.cook for 5 mins covered.Add in 1 cup of water and let it simmer in low flame.Adjust the seasoning if required.
Once done, garnish with fresh homemade garam masala and chopped coriander leaves.Serve hot with steamed rice, roti/parathas or naan.
