Parathas are one of the popular breakfast options in almost every home. You can try and make as many varieties of stuffed parathas, the options are endless.Some of our favourites are alloo paratha, mooli paratha, papita(raw papaya) paratha,methi paratha, i can go on and on.Parathas are typically served with plain curd, raita, pickle or dal. For us parathas doesnt only serves best for breakfast, we have it anytime of the meal.
Brocolli may not be the most loved vegetable, butyou’ll love it once you try out roasted brocolli,stir fry and mamy more..I’ll be updating some of my best brocolli recipes.. Stay tuned 🙂 As of now lets talk about this brocolli and carrots paratha. I guess i just love the combination of these two veggies.I use grated carrots and finely chopped brocolli, saute them with some onions and a hint of crushed garlic and garam masala.Thats it.. Its absolutely simple and quick to make .. Serve these hot parathas with garlic yogurt dip which is my personal favourite or if you like with pickle or some channa dal.
for the filling
- 1 cup finely chopped brocolli florets
- 1/2 cup grated carrots(2 medium sized carrots)
- 1 small chopped onions
- 2cloves of garlic grated
- salt to taste
- a pinch of haldi
- 1 tsp of garam masala
for the dough:
- 2 cups whole wheat flour
- a pinch of salt
- 1 tbsp of oil
- water as required
for the yogurt garlic dip:
- 1 cup yogurt
- salt to taste
- a pinch of red chilli powder
- 1 green chilli chopped
- 1 clove of grated garlic
- 1 tsp roasted cumin seeds powder
First make the dough for the paratha. in a large bowl add in flour,salt, oil and water as required. Knead into a smooth dough.Keep aside until ready to use.
In a wok, add in oil, garlic and onions.Saute for a while and add in broccoli, carrots, salt , turmeric and garam masala.Mix well and cook for 5 minutes.Switch off the flame and let the mixture cool down.
Take a portion of the dough,flatten it with your fingers and make a cavity scoop in a tbsp of the mixture and tuck in from all sides and pinch in the centre. prepare the remaining dough in the same manner.
Roll the dough into round parathas and place on hot tawa.Roast on both side until you see brown spots on the paratha. brush with a tbsp of oil on both side roasting well. Make all the paraths similar way.
To make the yogurt garlic dip.Mix all the ingredients in a bowl and serve chilled with all the parathas.
