baked samosas

Its raining !!! And it calls for bhajiyas, pakode, vades and my personal favorites Samosas.Samosas are made from a flaky pastry stuffed with potatoes and peas mixture.Imagine dunking hot samosas in tomato sauce or imli/tamarind chutney.Yum isn’t it.Now imagine making it guiltfree, replacing the unhealthy maida flour with whole wheat four and instead of frying them bake it with a drop of oil.Sounds weird.. but it healthy and equally tasty.Do give it a try once and you wont regret it.


for the dough:

  • 1 cup whole wheat flour/ atta
  • salt to taste
  • 1 tbsp of oil
  • 1 tsp carom seeds/ajwain
  • water as required


for the potato and peas mixture:

  • 3-4 boiled potatoes
  • 1 cup boiled peas
  • salt to taste
  • oil 1tbsp
  • 1 tsp red chilli powder
  • 1 tsp haldi
  • 1 tsp jeera/cumin seeds
  • 1 green chilli finely chopped
  • 1 tsp garam masala
  • 1 tsp amchur powder/dry mango powder
  • 1 inch grated ginger
  • 1 onion finely chopped
  • some chopped coriander leaves


First prepare the dough. In a large bowl add in flour,salt ,oil,water as required and knead into a soft dough.Cover with a damp towel and keep aside.

In a kadhai/wok add in some oil.once the oil is hot add in cumin seeds, grated ginger and saute for a white.Add in chopped onions and fry until tanslucent.Mash the potatoes and peas slightly and add to the wok.Toss in salt, red chillie powder,amchur powder,haldi and garam masala.Give a good mix until well combined.Switch the flame off and add in chopped coriander leaves and let it cool down down.

Divide the dough into smaller portions. Roll one portion of the dough.Do not dust extra flour on the surface.Roll the dough into a medium sized roti not too thick or not too thin.Cut in the centre of the roti.Keep one half aside and start to work on the other.

Apply water on the straight edge of the roti and join the two ends forming it just like a cone.Seal the pointy edge with your fingertips and hold the cone between your index finger and thumb.Now fill in a tbsp of mixture in the cone and seal the open edges.Make more samosas using this method and keep them on a baking tray lined with parchment or foil

Pre heat the oven @180 degrees.Brush the samosas with oil and bake for 35 mins or until completely cooked.

Serve them immediately with tomato sauce or tamarind chutney and a cup of ginger tea.
